Since i didnt have anything ready to punch out scallop sized circles and not really sure how it would cook up, I decided to slice and cut along the connective tissue holding the muscles together. When I was done I had lots of thin strips of meat. They look tasty, but it took a awhile to cut each piece. Finally similarly to shark I soaked the strip in milk. I’m going to let them soak for at least a day or so, and then decide how I want to cook them. I’m thinking about panko, and pan frying some and dipping in sweet/spicy thai pepper sauce, or maybe a white wine cream sauce or alfredo. Probably try several different ideas.
