The whole stingray (and shark) made into scallops by restaurants is an urban legend. Its one of those "I know a guy, who knows a guy, whos brother-in-laws uncle used to work at Red Lobster who "stamped" thier scallops of stingray wing. (like there is a fleet of stingray boats working in secret out there) Hopefully your pics will help dispell this persistent myth. Clearly you could not make a scallop out of that nasty meat. I use them from crab bait sometimes and they are just gross. How about all the worms in their stomach cavity? Nasty.
STINGRAY IS NOT USED TO MAKE FAKE SCALLOPS!
