Alright, here it is:
Mango Ceviche Mango
I make this typically with mangrove snapper, but margate, ARS, trigger, hog all work well
2 cups mango snapper, diced
4-5 key limes, or regular limes
2 medium mangos diced in 1/2" pieces
2 finely chopped jalapenos
finely chopped cilantro to taste
1 small red pepper
1 small vidalia or red onion, diced
sea salt and fresh ground pepper to taste
2-3 tablespoons Lawry's hawaiian marinade
Soak fish in freshly squeezed limes for about an hour in the fridge.
Drain most, but not all, of the lime juice off, add all other ingredients, refrigerate overnight.
