After trying it several times, I've concluded that the following is one of my favorite fish breadings. It gives a light non-greasy breading with a crunchy texture. It is second to only Panko, IMO, but easier to prepare.

1/2 corn starch
1/2 corn flour (Maize)
Your favorite seasonings

Dry flour it. Fry to a golden brown color and don't expect it to get too dark in color. I just got done chowing on some grouper breaded in it with honey mustard dressing for dipping. F'ing excellent! I had to tear myself away from it...and the kids. :D

Forgot....

A little sugar added to the breading will make your dinner guests run to it like a duck after a June bug.

Sounds good. I've been meaning to try crushing up some Cheezits for a dry breading. Came to me one day while I was at my desk eating Cheezits.

my friends mom put some cheezits on esome baked chicken breast and it was pretty awesome. good luck.

Marcus, Do you soak the fish in milk or anything? I usually soak mine in milk but you lose some of the fish taste. I have been looking for a dry shake for fish to fry. Thanks!!

Only if I suspect the fish might have some fishiness to it. The milk somehow removes alot of the fishiness.

Another real simple easy good dry shake is pancake mix. Sometimes I don't have enough time to make something better and it's a real good alternative.
