An old favorite......I got this from the old board back in 2005 or something.


Parmesan Grouper

1 Cup – Fresh Parmesan cheese, grated
1/2 cup – Butter, softened
3 Tablespoons - Mayonnaise
3 Tablespoons - Green Onions, chopped
2 Teaspoons - Fresh Garlic Chives, chopped
1 Teaspoon capers
6 Fresh Fillets (about 8 ounces each, one inch thick)
1/4 Cup – Fresh Lemon Juice
1/4 Teaspoon – Fresh Ground Pepper

Combine cheese, margarine, mayonnaise, green onions, capers, and chives in a small bowl; stir well, and set aside. Place fillets on a lightly greased rack in a broiler pan. Drizzle lemon juice over fillets; sprinkle with pepper.

Broil 6 inches from heat 8 to 10 minutes or until fish flakes easily when tested with a fork. Remove from oven; spread tops of fillets with cheese mixture. Broil an additional 2 minutes or until cheese is lightly browned and bubbly. Remove fillets to a serving platter. If desired, garnish with lemon slices and fresh chives.

This is a great recipe, I have made a very similar one a lot of times with slight variations. One thing you can do especially if you are already grilling or camping, or just dont want to have to clean a pan, you can do it on aluminum foil, put down your onions butter garlic ect on foil creating a bed for the fillets to sit on, then spread on your mayonaise or plain yogurt with your freshly grated parmersian cheese and any dry seasonings you would like as well. Then fold the foil over top creating a tent that is totally sealed, but not touching the top of the fish or the cheese will stick.

Then you can stick this foil tent in the oven, on the grill, or over a campfire for less than 5 minutes and it is ready to enjoy.

You can throw that sauce on an old boot worn by a 50 yr old Ft Pierce US1 crack whore with no socks and it will still taste awesome!!!!

I made it last night. I asked the kids how they liked it but got no repsonse cause they were too busy stuffing their faces.
