Stole this from another forum...sounded so good I put here so I could find it next time.
Use serving size pieces of nice thick fresh grouper or other similar (if any) fish.
Whisk an egg with some hot sauce and soak fish in it.
Roll fish in Vigo Italian Bread crumbs.
In a large frying pan with a lid, saute a sliced key lime in 1/2 stick of butter on med hi heat.
When lime is cooked down remove the rind and add fish and brown on one side.
Flip fish over, top with chopped fresh spinach, mushrooms, and Parmesan cheese. Add the other 1/2 stick butter, cover the pan, turn heat to low and cook 5-9 minutes (depends on thickness) or until fish is done.
Remove fish to serving platter being careful to not spill the toppings, stir the pan drippings and use as a sauce. Garnish with sliced Key Lime.
