    Default Cuban Style Grouper

    Here's a pretty easy recipe with bold flavor yet very light.

    Ingredients
    Grouper (may substitute mola-mola is availble)
    Green and red bell pepper thinly sliced
    White or Vidalia onion thinly sliced
    Plum tomatoes seeded and diced
    Capers
    Garlic
    Red pepper flakes
    Olive oil
    Butter 1-2 tbsp
    Dry white wine 1 1/2 cups
    Fresh cilantro

    Heat olive oil in large skillet and sautee onion, red and green pepper until slightly soft. Add tomatoes and garlic and continue to sautee. Add wine, red pepper flakes, and capers and heat until simmering. Place grouper in skillet and spoon liquid and vegetables over top. Hard simmer for 10-12 minutes turning fish over halfway through. Cut butter into small pieces and distribute through skillet and let melt. Test fish with knife, and when done add chopped cilantro over top.

    Here is the dish before serving, and plated with from scratch
    black beans over brown rice.

    Eat this and you will become rugged.

    Had some leftover grouper from last Sunday from a team effort by my son, daughter, myself and Mr. Grey Suit. I was going to try it but my wife who is typically pot and pan challenged made it. It was excellent. Thanks.

    I tried this last night and it was excellent. However I served it very hot and it left some white rings on my table. Anyone know how to remove them?

    Default Cuban/Cajun Grouper

    I told you I was going to try your recipe. My mouth was watering looking at your dish.

    But, I have a hard time taking directions, so I improvised.

    I'm not happy with my beans but I took a shortcut, and used a bean and rice packet that was already seasoned. I also put some salt pork in them to give them more flavor. After they were cooked I decided that I didn't have enough beans and too much rice, so I went to the store and bought more beans to put in the pot.

    Tomorrow, I'll bake the grouper, and haul all this stuff to Gonzales to my sisters house, I'll have to heat up the peppers and beans and I'll let everyone put their own on their fish.

    We'll see tomorrow if anyone like this stuff. I know one thing the house smells great.

    Best part about this, is if it tastes good, I still have the other half of this fish and all the ingredients to cook the same dish over again.
