The color depends on several things like water clarity, What nerves the spear cut when penetrating the fish, how fast the fish was put on ice ECT.

After looking at the picture again It could possibly be because of the stringer being run through his eyes. Just a guess, I have seen Flounder that didn't match other Flounder in the ice box just like the difference in your hogs..

If the color was like that when he first nabbed it then will say its either 2 things. 1 environmental effects similiar to Red Drum going from a coppery color to a silvery color depending on the water they spent time in or, 2. genetic difference similiar to the effects albinoism has on pigmentation.

If after it was iced and pulled out i have no clue.

We see them like that before they are shot or iced. It's normally the smallest male on the spot that is the darkest.

That is a normal color variation. See it all the time. They can change colors on the fly to match the bottom color. Females seem better at it though.

Two years ago in the Keys, I spotted a hogfish laid up next to brain coral and it was a mottled brownish color. As it swam out over the sand it changed color to that light color you asked about. And as it got further away it changed to the more standard redish color. This all happened in about 20 seconds.

Really cool.
